Butterscotch & almond puddings with butterscotch sauce

For the butterscotch sauce, put the butter, sugars and golden syrup into a pan and leave over a low heat, stirring from time to time, until the sugars have dissolved. Stir in the cream, vanilla extract and a pinch of salt, then leave to cool. This can be stored in a screwtop jar in the fridge until needed.

Heat oven to 180C/160C fan/gas 4. Lightly butter 8 x 175ml individual pudding moulds. Using an electric whisk, beat the butter in a bowl until light and creamy. Add the muscovado sugar and beat for 5 mins until the mixture is very light and fluffy, then slowly add the beaten egg, beating well between each addition, adding a little flour towards the end if the mixture looks like it’s about to curdle. Sift over the remaining flour, baking powder and a pinch of salt, then gently fold together with the ground almonds and 1 tbsp milk if the mixture looks a little stiff.

Spoon the mixture evenly into the pudding moulds, then put on a baking tray. Bake for 20-22 mins or until golden and a skewer pushed into the centres comes out clean. Warm the sauce over a low heat in a small pan.

Remove the puddings from the oven, leave to cool for 2-3 mins, then run a round-bladed knife around the outside of each one and turn out. Drizzle generously with the warm butterscotch sauce and serve with a scoop of Clotted cream & stem ginger ice cream (see ‘Goes well with’). Or cool the turned-out puds completely, then cover with cling film and set aside. Reheat each one in the microwave on High for 1 min until steaming hot (keep them warm in a low oven while you heat each one), then serve

Oreo Cheese Cake

Ive Noticed alot of oreo cupcake fans out there so thought this weeks recipe of the week should take that twist :) so here we go Oreo Cheesecake

18 Oreos, crushed in blender
1/4 cup melted butter
24 oz cream cheese, softened
1 (14 oz) can condensed sweet milk
3 eggs
2 tsp. vanilla

Mix Oreos and butter and press in a greased 9 inch spring-form pan.

In a large bowl, cream remaining ingredients until well blended. Pour into spring-form pan.

Break up 8 Oreos and drop on top of the batter. Bake 45-60 minutes at 300 degrees F. Don’t over-bake your cheesecakes or they will crack on top.

Cool to room temperature and chill in refrigerator before removing pan.

It seems my life got rather too hectic for all this blogging business, University, portfolios, assigments and generally just LIFE got in the way…and even though nobody really cares, i feel like its time to start this whole thing up again…if only i didnt have so much work to do, being on a fashion marketing course is A LOT of work, Dontchaknow…

so anyway for those few people who stop by now and then…something yummy..just until im back on form….

Oh No Not Christmas Already

Layer all the ingredients in a 1 litre glass or plastic preserving jar in the order the ingredients are listed.
Write the following method on a gift label: ‘Tip the contents of the jar into a large mixing bowl. Make a well in the centre and add 2 beaten eggs, 300ml/½pt milk and 100g/4oz melted butter. Mix quickly and lightly to a soft batter. Divide between 12 muffin cases. Bake at 190C/fan 170C/gas 5 for 18-20 mins. Use within 4 weeks.’ Attach the label and a wooden spoon to the top of the jar with some raffia or coloured ribbon.

This weeks favourite is…

Chocolate Coca Cola Cake

Prepare the icing during the last 10 minutes of baking so it is ready to spoon onto the warm cake.

Makes 12 servings

The Cake

Ingredients

1 cup butter
1/3 cup cocoa
1 cup cola soft drink
2 cups all-purpose flour
1 1/3 cups sugar
1 teaspoon baking soda
2 large eggs
1/2 cup buttermilk
1 teaspoon vanilla extract
1 1/2 cups miniature marshmallows

Preparation

Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts. Remove from heat.

Combine flour, sugar, and baking soda in a large bowl; stir in butter mixture.

Add eggs, and stir until blended. Stir in buttermilk, vanilla, and marshmallows.

Pour into a lightly greased 13- x 9-inch baking pan.

Bake at 350º for 25 to 30 minutes or until a pick inserted in center comes out clean. Remove from oven; spread Chocolate Coca-Cola Icing over warm cake.

The Coca Cola Icing

Ingredients

1/2 cup butter
1/4 cup cocoa
1/3 cup cola soft drink
3 cups powdered sugar
1/2 teaspoon vanilla extract
1 cup chopped pecans

Preparation

Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts.

Remove from heat; stir in powdered sugar, vanilla, and pecans. Spoon immediately over warm cake.

A relatively old website that i used to follow daily but completely forgot about until today

Another New Discovery

After Hours of searching on the Internet, i managed to finish my work experience for this week and also find another cool website to spend hours on :)

Poladroid..for ages ive wanted a Polaroid camera but didn’t see the point seeing that Polaroid arnt making film anymore…so insted of spending hours in photoshop (ok perhaps not hours for you but defiantlyhours for me) creating that Polaroid affect we can now use this!

Its simple, just download it, drag your photos in and wait for them to develop (yes they develop like in real life!) and if you shake them they develop quicker! (how cool is that?)

You can adjust the tilt, the amount of processing, and even the little smudges and stuff that you would find on a real life Polaroid!

New Discovery

Recently I have been doing some work experience for a small group of women who run fashion shows for up and coming designers in London, mainly ive been just doing research and creating databases, but i have discovered that even doing these simple things has amazing advantages

Basically i am being forced (perhaps a strong word) to read fashion blogs, and online fashion magazines for hours everyday..i know lucky me eh?now normally id have alook at these sites, perhaps a few a week and it wouldn’t really make a whole lot of difference, but thanks to the sheer number that im looking at, im finding that im learning, SO MUCH…

…i have discovered things that i didnt even know existed

the Internet is whay bigger than we could ever know, theres so much hidden out there in that world wide web!

i dont pretend that im some sort of style icon, or that my knowledge of fashion is amazing, in fact its pretty poor, but im thinking that my love for this industry is blooming and im even thinking about a fashion degree at uni..

im so glad that ive been able to learn so much!

well anyway what is the point to all this i hear you cry…

well i thought id share my favourite find of all, one that gets my creative juices flowing to the max…tis…
